99' Inspired cupcakes



Ingredients 

 

For the cake:

200g Unsalted butter 
200g Caster sugar 
200g self-raising flour
4 eggs
1tsp vanilla extract
1tsp baking powder

For the icing:

250g Unsalted butter
500g Icing sugar
1tsp vanilla extract
Sprinkles
Chocolate flakes

Method 

  • Preheat the oven to 180°C/ 350°F and line a 12 hole muffin tin with cupcake cases. 
  • In a bowl combine 200g of Unsalted butter and 200g caster sugar and mix until light and fluffy. 
  • In a separate bowl beat together the eggs and gradually add into the mixture along with the 200g of self-raising flour, baking powder and vanilla extract. 
  • Once combined, pour the batter into the cupcake cases and put into the oven for 15-20 minutes or until golden brown. 
  • Once cooked transfer onto a cooling rack and leave to cool. 
  • For the icing, in a food processor beat the butter until light in colour and gradually sieve in the icing sugar and add the remaining vanilla extract. If the icing is too thick add a dash of milk. 
  •  Add the icing to a piping bag and pipe onto the cupcakes or use a knife and spread the icing on. 
  • To finish add you choice of sprinkles and half a chocolate flake.
