Chocolate chunk cookies
Ingredients
200g Unsalted butter
200g Caster sugar
350g Self-raising flour
1 egg
1-2 tbsp milk
1tsp baking powder
1tsp vanilla extract
200g Milk or dark chocolate
200g White chocolate
Method
Preheat the oven to 180°C/ 350°F and line two baking trays with parchment.
In a large bowl combine the butter and caster sugar until light and fluffy.
Beat in the egg and the vanilla extract into the mixture.
Sift in the flour and baking powder and mix until a soft dough has formed. If the dough is too dry add the milk in gradually until it reaches a softer consistency.
Break the chocolate into chunks and add to the dough.
Finally, divide the mixture into 10 -12 balls roughly the size of a golf ball and place onto the baking tray, leaving plenty of room to allow the cookies to spread.
Bake in the oven for 12-15 minutes or until golden brown. Then leave to harden slightly before transferring them to a cooling rack.
