160g Plain Flour
100g Unsalted butter
75g Caster sugar
1tsp Vanilla extract
1 1/2 Lavender
150g Icing sugar
1 Lemon (Juice and zest)
1. In a bowl combine the flour and caster sugar, then rub the butter into the mixture until you reach a breadcrumb like consistency. Add a tablespoon of lavender and the vanilla extract and bring the mixture together to form the dough.
2. Turn the dough out and roll out until to about a 1cm thickness. Cut the shortbread into your desired shape and place on a baking sheet. Cook for 10-12 minutes until slightly golden. transfer to a wire rack and leave to cool completely.
3. Meanwhile, begin making the lemon drizzle. Juice and zest one lemon and combine the juice with 150g of icing sugar and add half the zest to the drizzle. Once the shortbread is completely cool use a spoon and gently pour the drizzle over the shortbread and sprinkle on a small amount of the remaining zest and lavender.
