Healthy Granola bars

 Ingredients

175g Oats
100g Mixed nuts
100g Peanut butter
75g Dried cranberries
2 tbsp Chia seeds
4 tbsp Honey

Step 1: Begin by preheating the oven to 180°C. In an oven proof dish add the oats, nuts and chia seeds and bake for 10 minutes. Remove from the oven and mix  before returning back to the oven for a further 10 minutes.

Step 2: Once the oats are lightly toasted add all the dry ingredients into a large mixing bowl then add the dried cranberries. It's better to add them at this point as they would become too tough if you bake them along with the rest of the dried ingredients. You can use any dried fruit you like some great options are dried blueberries, cherries or raisins.

Step 3: Melt the peanut butter in a saucepan or in the microwave for 2 minutes stirring every 30 seconds, this will make it easier to combine everything together. Then add the peanut butter and honey to the dried mixture. If you're not a fan of peanut butter you can use any other nut butter or just butter (they probably won't be as healthy if you use butter, but they'll taste just as delicious).

Step 4: Mix everything together, if you think the mixture looks a little dry add a teaspoon of honey at a time until the mixture is combined. You want the mixture to stick together but not be too wet otherwise once baked the bars will be crumbly.

Step 5: Line an oven proof dish with parchment paper. Then using a rubber spatula press the mixture into the dish until evenly distributed.

Step 6: Finally, place into the oven and cook for 10- 15 minutes. Once cooked leave in the dish until completely cooled then cut into bars.
