Chocolate & hazelnut biscotti
Ingredients
2 Eggs
220g Plain flour
30g Cocoa powder
150g Caster sugar
1 tsp Baking powder
100g Hazelnuts
150g Dark (Or milk) chocolate
Icing sugar for dusting
(If you aren't a fan of hazelnuts other options are chocolate chips for double chocolate biscotti or use the zest of an orange and 2 tbsp of orange juice for chocolate orange biscotti. They all taste delicious!)
Step 1: Preheat the oven to 180°C and line a baking tray. In a large bowl whisk together the caster sugar and 2 eggs together for around 5 minutes until the mixture has doubled in volume.
Step 2: Once the mixture is light and fluffy. Sift in the flour, cocoa powder and baking powder.
Step 3: At this point add the hazelnuts or if you would prefer add chocolate chips or orange zest and the juice. Then gently fold the dry ingredients into the mixture.
Step 4: Once you have combined the mixture together it should form a very soft dough. Make sure to sprinkle a generous amount of flour onto the surface before turning the dough out.
Step 5: Gently knead the dough until smooth, then shape into a rectangle and place onto the prepared baking tray then bake in the oven for 40 minutes.
Step 6 : Remove from the oven and leave to cool slightly. Once you are able to handle it use a serrated knife and at an angle cut into slices. Lay the biscotti slices on the baking sheet and return to the oven for 12-15 minutes turning them half way through to ensure each side is toasted.
Step 7: (The step is optional) Turn the biscotti onto the side and sprinkle with icing sugar.
Step 8: Finally melt the chocolate over a bain-marie and drizzle over the biscotti. As a final touch we crushed up some of the remaining nuts and sprinkled them over the top.
