Lemon shortbread




Shortbread Ingredients 

225g Plain flour 
150g Unsalted butter 
70g Caster sugar 
Juice and zest of 1 lemon

Drizzle ingredients 


75g Icing sugar 
2-3 tbsp lemon juice 



Step 1: Preheat the oven to 180°C and grease a loose bottom cake tin. In a large bowl combine the flour, sugar and lemon zest (keep a little zest behind to garnish at the end).


Step 2: Add the butter into the mixture and rub into the dry ingredients until you have a breadcrumb consistency. 


 Step 3: Then add 2 tablespoons of lemon juice and bring the mixture together until it forms a dough. 


Step 4: Press the dough into a loose bottom cake tin and using your finger crimp the edges and sprinkle the remaining lemon zest over the top. Place into the oven and bake for 15 minutes or until golden brown. 

Step 5: When the shortbread comes out of the oven it will be slightly soft making it easier to cut. Transfer to a chopping board and cut into triangles and leave to cool while you make the drizzle. Combine the icing sugar and lemon juice and finally drizzle over the shortbread.
